Dinner

Well, we outdid ourselves on dinner tonight. We were watching the Food Network last night and got all inspired by Emeril. Erin suggested that we recreate the entire meal and, being the flexible guy I am, I agreed.
After a hefty trip to Central Market for all kinds of goodies, and two hours in the kitchen working non-stop, we treated ourselves to an amazing dinner.
Pan seared Grouper filet in a tomatillo sauce with a mango and fruit salsa, topped with homemade Julienned tortilla chips and a crab meat guacamole sauce. Served with a pitcher of passion fruit margaritas. Dessert was a strawberry lemon cheesecake parfait.
The picture below doesn’t really do the taste justice. It was one of those dishes where all the ingredients combine to make a totally separate flavor that we had never tasted before, and everything complimented perfectly. I’ve never been a huge fan of Emeril because of his New-Yawker schtick, but after this meal, all I have to say is… BAM!

Probably the best meal either one of us has eaten. Dinner anyone?

Here are the recipes for the meal. Check out those ingredients!
